I have written a guide for Pre-raid Prot warrior and Death Knights gearing at level 80. This guide is aimed at casual players who just want to gear as much as they can without putting the time and effort into raiding or for people who are preparing themselves for raiding.
The items are listed as Quest rewards, Profession ceations, Rep rewards, World Drops, Heroic Drops, Normal Instance Drops and Heroic Badge rewards. It is a different guide to the one in the sticky since that just focuses on easy to obtain quest rewards, this is everything that is obtainable pre-raiding.

seeing as im a DK i find i have little use of your weapon section.
as a DK i tank with a 2H yet theres only 1h in your guide.

seeing alot of DKs with trouble getting the def cap can i suggest http://www.wowhead.com/?item=41357 for the glove section? it has 71 defence rating wich is more then on the gloves you listed.

the problem with duelwielding is that the boss will parry you alot more and this means that you keep reseting his swing timer. can get a bit hurtfull without the propper avoidance.
btw if you look at my gear im critimmune without doing a single heroic. could get some stuff from there if you need.

You'll be hard set to get expertise capped whilst not gimping the rest of your stats, though, even with the extra tanking stats you'll be getting from dual wielding 2 tanking swords.
Also, for weapons the Mojo Masked Crusher from Drak'Tharon Heroic is very nice - http://www.wowhead.com/?item=37733 - second best tanking weapon behind the axe from HoL, imo.
I think u missed some shoulerds from heroic or norm Gundrak... Pauldrons of the collosus or smth like that.. for me theya re better than epix shoulders from patchwerk in 10 man naxx... It's some lvl 78 blues
